Head chef for the restaurant at Markree Castle, Strandhill native Dave Mullan, is creative and passionate about food. Before returning to Sligo, he was head chef at the Ice House Hotel in Ballina and worked in the Blue Haven in Kinsale. He trained in Killybegs and in Ballymaloe, and has worked in London and Dublin. In Dublin he worked in restaurants such as the Mermaid Cafe, Fitzer’s, and Shanahan’s on the Green. Dave’s menus infuse the very best of local and Irish produce combined with innovative flavours.
